My advice would be to set a minimum requirement that suits your needs and free time and go from there.

You're right, I don't use it often. I couldn't tell you whether it's a big factor, but it certainly helps my work to not look clogged up. Too much italics and bold doesn't give the text enough opportunity to flow, in my opinion.
